So many decisions

In life, we are always making decisions, some decisions, people don't like, some decisions people want you to make you don't like. My heart is pounding because I decided several years ago I wanted a tattoo and finally I got it. The scary part is that I just "told" my parents...it may have been in an email but I better express myself in writing than trying to tell them in person or over the phone. No big deal right? I turned 24 on Friday, I have a house with my fiance, I have a full time job, I can make my own decisions...well I am a person that cares a LOT about what others thing, especially my parents, so now that I sent the email, there's no going back and I can't relax. It will drive me crazy! I absolutely love my tattoo, it means the world to me, there's no way I'd take it back, but that does not keep me from being crazy nervous. UGH....I drive myself crazy!!

As far as my wedding goes, I can't decide fully on my wedding party. I have 3 girls for sure, they were and will be a part of it, but these past few days I have really been considering asking my sister to stand up. I love my sister, but we've always had an interesting relationship, never SUPER close, but always there for one another. The other issue with adding her, which isn't a huge issue, but Chad would have to consider if he'd want to add a 4th guy. Just something we'll have to figure out.

I just needed to get that off my chest, I hope everything works its way out. I can't even type right now....my backspace key is getting a workout.

Wedding planning! And organizing my birthday weekend...

This week I have really been in the wedding planning mode. Sunday, my dear friend (and of course bridesmaid) Stacey was over and we did some flower planning...since she's doing my flowers... :) She found a picture on Pinterest a while ago of a bouquet that had Scrabble tiles on the stem wrap. I LOVE Scrabble so we definitely decided to go with it. Mine will have my married last name on it, my 3 girls will be Faith, Love, and Joy and my goddaughter flower girl's pomander will say Hope. So much fun! 


I ordered 2 sets of Scrabble tiles online, and with the extra tiles we were thinking it would be fun to have a Scrabble game to make us kiss instead of the clinking of the glasses. We still have to work out the details though.


Today, my mom came over after work and we went to one of the bridal stores in town and I actually tried on dresses. It was definitely surreal, but fun to narrow down the style of dress I might wear. We actually had 2 favorites when we left so if I get it there, I have an idea of what it would be :)


Next week Friday is my 24th birthday...in the scheme of things it's not a major birthday, but my mom told me yesterday she thought we would all (my family) get together at my parent's house for supper..... All is good and fine but with working til 5 (or 6 or 7 for Chad), then driving a half hour it makes the night long. So then we decided, let's have it at my house...my parents and brother and sister would still have to drive, but my brother hasn't seen my house yet so it's a win-win for us. But I don't know, we'll have to see what actually gets planned.


The other thing I keep asking people for an opinion on is what to make for a treat to take to work. Cookies, bars or cupcakes??? I could make a couple kinds of cookies...or a pan of bars....or cupcakes if I want to be creative and decorate them. Such a quandary. Thoughts???

Changes!

Jeepers, I really need to either give up or try harder to write on here more. Not that I'm convinced anyone reads it, but it's still out there and I like to think maybe someone DOES read it. 


Anyway, Chad and I have moved into our own house (beginning of March) and things are almost completely put away!!! It definitely feels like home. We have had some issues with chipmunks but a few rat traps and they were taken care of. Although I am not a fan of harming little animals, or any animals for that matter, it doesn't really bug me cuz I'd rather have them gone then be paranoid they're in the garage and our vehicles and such. 


Easter was a crazy busy weekend, we bowled a tournament on Saturday afternoon, went to eat Saturday night, then Sunday traveled all day but I did make some awesome brownies for each Easter celebration. My family got walnut brownies, and Chad's family got marshmallow brownies. They were moist and chocolaty and delicious.


Today I decided to try Twitter for the 3rd time. I think this time it's going to grow on me.  


I am hoping to be baking soon again, but things are just constantly busy around here. Planning a wedding, getting settled in the house, and still trying to have a life keeps us busy. Give me a few days, I'll try to have something up, although it won't be fancy, it'll be delicious. :)

2 years later

Well, it has now been a good year and a half since my last post and I feel the need to write and express myself, maybe it'll help me feel better...

I have graduated college, moved home, got a full time job that I love, become engaged to the love of my life, and we are now buying a house and closing on it in just a few weeks. YAY!


Anyway, I have been doing a lot of recipe typing from ones I find in magazines and books. With them, I am going to laminate them and make my own cookbook with categories and everything :) But I also get ideas from work and TV and such. I work at one of the grocery stores in town in the deli making all the foods sold in the cases. Hot food, salads, dips, etc. Due to Valentine's Day, we have a lot of special things we have been making, one of them being Oreo truffles. They're actually quite easy to make so last night, Chad and I made some. Some of it was trial and error but they turned out quite good. :) We made some plain and some topped with chopped walnuts. Next time we will for add more Oreo's to the 2 packages of cream cheese but these were good anyway.



Anyway, life has just been hectic, planning a wedding, buying a house, and trying to keep in touch with everyone (especially your family) can be frustrating but you've gotta do what's best for you and know (and hope) that it'll all turn out the way it's supposed to.

I'll try to be on top of things more often even though I'm not convinced anyone reads this, it's worth a try!

Post meal and delicious Porto!

It's over!.....the meal is, not the rest of the project. My Restaurant Operations meal was on Tuesday and there were many bumps along the way, especially Monday night and then throughout the day Tuesday, some that even threatened the cancellation of our meal, but when it was established that the meal was a "go" it was fairly successful! Everyone loved the food and the flambe I did was awesome! My family loved it and I am so glad they made it. --- Anyway, as I said the project isn't quite over because my partner and I have to finish our manager's packet, but after that it'll be great :)

On another note, tonight I had my wines and spirits class. We learned about Spain and Portugal and then got to sample some fine wines from the two countries. Our wines were paired with fantastic food items including Paella, Beef with Tomato Sauce, Pork Tenderloin, and fresh made Chocolate Truffles...just to name a few!

The Truffles were by far the best part of the meal and they were paired with a Vintage Porto from 1997. My goodness was it the most wonderful thing I could have ever imagined! If you ever get the chance to try it, don't pass it up!!! We had Cockburn's Vintage Porto, but there are many other great Quitas available, and if you can have a vintage, definitely do it!

This may jump around a bit but I've got so many different things to mention :)
Yesterday I decided to make tacos for lunch....used ground turkey instead of beef and topped it with tomatoes, lettuce, cheese, black bean and corn salsa and fresh chopped onion. It was DELICIOUS! Standard taco stuff, ortega seasoning, just the usual, but they were still good, and a bit more nutritious due to the turkey.  I took a picture, it looks huge, and it kind of was (but the edge of the tortilla was also propped up which makes it look bigger), but all I needed was one to fill me up! :)



While I was making the tacos, I opened my patio blind things (not sure the actual name of them...they go down to the floor and block the whole patio door) and all the sudden my roommate says "it's a cat"....I looked at him a little sideways like, what??? then I looked at the door and sure enough there was a cat! Meowing away, it was so cute! I'm not sure if it was a boy or girl, but it sure was a fat cat. It sat there for at least 30 minutes.... I opened the door twice, once to pet it, the second time to try to see if it was hungry....it denied the food. It was definitely an indoor cat because he or she did not like being outside. After I sat down to start eating, it decided to leave. But I was lucky enough to take a picture before it left... :)





If I would have known if he or she belonged somewhere or not, if my other roommate and I weren't allergic, and if I wasn't such a clean freak (also if it didn't cost more to have a pet in my apt) I think I would have brought him or her inside and adopted it. If he or she comes back, that's cool, but I really hope she (I'm gonna go with a she...she was so big there's a chance she may have been pregnant) found her home. :)

Meal and Menu planning

Now, I can't take credit for the ENTIRE menu, but the formatting and the font choices are mine and I am very proud of them. I think it looks fabulous and the food sounds delicious just reading the names of them on the menu! It's a small step for everyone around me, but it's a HUGE deal to me and I feel like it's a huge step in my culinary life. :) I have included it for everyone's viewing pleasure. Stuffed Green Peppers

Well, here I am!!! I said I was going to try to write more often and YAY I did it! Anyway, for the past 3+ years my boyfriend has told me about stuffed green peppers, and always saying I needed to try them. WELL, now I have! Last night, we got a recipe online since his dad couldn't find the recipe they had at their house, and after gathering all the ingredients, we not only made a delicious supper but we did it together...which is always fun! I really need to give credit to allrecipes.com and the "Stuffed Green Peppers I" recipe we got. It's delicious and I absolutely recommend it to anyone! I wish I would have taken a picture of the finished product but at the time I wasn't thinking about it.

Ingredients

  • 6 green bell peppers
  • salt to taste
  • 1 pound ground beef
  • 1/3 cup chopped onion
  • salt and pepper to taste
  • 1 (14.5 ounce) can whole peeled tomatoes, chopped
  • 1 teaspoon Worcestershire sauce
  • 1/2 cup uncooked rice
  • 1/2 cup water
  • 1 cup shredded Cheddar cheese
  • 2 (10.75 ounce) cans condensed tomato soup
  • water as needed

Directions

  1. Bring a large pot of salted water to a boil. Cut the tops off the peppers, and remove the seeds. Cook peppers in boiling water for 5 minutes; drain. Sprinkle salt inside each pepper, and set aside.
  2. In a large skillet, saute beef and onions for 5 minutes, or until beef is browned. Drain off excess fat, and season with salt and pepper. Stir in the tomatoes, rice, 1/2 cup water and Worcestershire sauce. Cover, and simmer for 15 minutes, or until rice is tender. Remove from heat, and stir in the cheese.
  3. Preheat the oven to 350 degrees F. (175 degrees C). Stuff each pepper with the beef and rice mixture, and place peppers open side up in a baking dish. In a medium bowl, combine tomato soup with just enough water to make the soup a gravy consistency. Pour over the peppers.
  4. Bake covered for 25 to 35 minutes, until heated through and cheese is melted and bubbly.

    The recipe makes 6 servings.
